I get a lot of questions about what I actually eat (I’m currently aip). So I thought I would post one of my favorite breakfast bowls!
We call it carrot cake porridge. It was cold this morning so I didn’t want my usual smoothie with collagen. This warm nourishing bowl was perfect! It lacks in protein though so make sure to include that as well (a side of bacon would be great).
Carrot cake porridge
1 whole apple diced
1 cup diced carrots
1 tsp cinnamon
Pinch of salt
1 tbsp oil of choice (butter, coconut etc)
Maple syrup to taste
1/4 cup raisins
1 whole cooked sweet potato
3/4-1 whole cooked spaghetti squash (depending on size)
Sauté carrot and apple in oil until slightly tender. Set aside. Purée cooked sweet potato (skin on) and the spaghetti squash (scrape out all the inside and use that). Mix all ingredients together and drizzle with lots of maple syrup! Done!
