Pumpkin muffins/pumpkin bread! (dairy, soy, corn, and gluten free)

Nothing says fall quite like pumpkin bread and pumpkin muffins! It’s no secret I am a huge fan of pumpkin and my kiddos share my enthusiasm. So this is for them! Moist, gluten free, corn free, soy free, dairy free, naturally sweetened, clean and simple pumpkin muffins!! Kid approved!

2 generous cups gluten free flour (I used bobs red mill 1:1 baking flour)

1tsp baking soda

1/2 tsp cream of tartar

1/2 tsp salt

2 tsp cinnamon

1/2 tsp allspice

1/2 cup applesauce

1/4 olive oil

1/2 cup maple syrup

2 large eggs

1 15oz can pumpkin

Mix all dry ingredients well and add in all wet ingredients. Stir until combined and most of the lumps are gone.

Spoon into a greased muffin pan. Bake at 350 degrees until toothpick comes out clean.

Makes 12 large muffins.
