aip apple orange cake (coconut free)

This cake.

I call it breakfast cake but really I eat it any chance I get. It’s very moist and dense and packed with flavor and sweetness. It’s also coconut free and completely aip compliant.

So let’s have our cake and eat it too :).

This cake is divine. Be warned.

aip coconut free apple orange cake

2.5 cups tigernut flour

1/2 cup oil (I used olive oil)

1/2 cup maple syrup

2 cups diced or grated apple

1 tsp baking soda

1 tsp  ream of tartar

3 gelatin eggs

1 Tbsp apple cider vinegar

1/4 tsp salt

10 drops young living orange essential oil OR zest of 1-2 large oranges

Mix all ingredients well and pour into greased 8×8 glass baking dish. Bake until too is dark brown and toothpick comes out clean.

Top with maple frosting for an even sweeter treat!

 

Gelatin Egg

1 Tbsp gelatin

1 Tbsp cool water

2 Tbsp very hot water

Mix together cool water and gelatin. Then slowly add in hot water while whisking well to incorporate.

 

Simple Maple Frosting

powdered maple syrup

ghee

1 tsp vanilla

1 tsp cinnamon

*if you do not tolerate ghee, use palm shortening

With an electric mixer, mix equal amounts of shortening/ghee and powdered maple syrup. Adjust ration from there. You want a creamy spreadable frosting. Add in vanilla and cinnamon.
