instant pot aip sauerkraut soup

Simple, soothing, and nourishing but packed with loads of flavor. This soup is a personal favorite! It’s especially amazing when you are under the weather or recovering from illness. However, it’s delicious enough to eat anytime!

Ingredients:

1 whole jar of bubbies sauerkraut liquid included (or roughly 3 cups sauerkraut with juice)

1 carton of chicken stock/bone broth

1/2 a large onion sliced

4-5 large carrots sliced

6 collard green leaves (middle stem removed) sliced

1 cup frozen peas

juice of half a lemon

italian seasoning to taste

salt to taste

Dump everything in the instant pot and cook on “soup” for 20 minutes. Enjoy!
