When it comes to feeding our littlest ones, nutrient density is key. We also want to make sure it’s easily digestible and won’t cause inflammation to their tiny gi systems.
We also want things that are easy to make, easy to eat and hold, and we would like it to taste good.
These little cookies are the result!
Super moist, packed with nutrients, protein/collagen, and healthy fats, these cookies are perfect for growing bodies. They are also naturally sweetened, gluten and grain free, dairy free, nut free, legumes free, and soy free. They are also Paleo!
Hudson ate three and continued to sign “more”. I’ll take that as a compliment :).
Baby cookies (makes 10-12 small cookies)
*appropriate for those 8+ months old
1/2 cup coconut flour
1/2 cup unsweetened applesauce
1 Tbsp coconut milk or water
1 Tbsp honey (use maple syrup if baby is under 1)
2 tsp gelatin
2 tsp olive oil
2 egg yolks
cinnamon to taste
pinch of sea salt
Mix all ingredients well by hand. Form small balls and place on cookie sheet. Press gently to flatten. Bake at 350 until the bottoms of the cookies are a medium brown color. Set out to cool and then serve!
